Easy Slow Cooked Baby Back Ribs 

Ingredients

  • 150g brown sugar 
  • 1 tablespoon smoked paprika 
  • 1 tablespoon garlic powder 
  • Pinch salt 
  • Pinch pepper 
  • 2- 3 racks pork baby back ribs 

BBQ glaze 

  • 150g apricot Jam or canned apricots with 100g honey 
  • 65g tomato sauce/ketchup 
  • 2 tablespoons worcestershire sauce 
  • 2 tablespoons dijon mustard 
  • 2 tablespoon white vinegar 

Method: 

  1. Preheat the oven to 150°C with the rack in the middle of the oven. Line a baking tray with 2 layers of aluminium foil.
  2. In a small bowl, mix together the smoked paprika, garlic powder, salt and pepper.
  3. Pat the ribs dry with a paper towel to remove excess moisture, then apply the rub to both sides of the ribs. Wrap each rack of ribs in aluminium foil and place them on the baking tray in a single layer with the bone side down.

4. Roast in the oven for 2 hours.

5. In the meantime, prepare the BBQ glaze by placing all the ingredients in a saucepan and cooking over medium heat until it starts to bubble and becomes thick.

6. Discard any extra juice in the pan after the 2-hour cook time. Unwrap the ribs carefully, they will be tender, so take care not to break them apart. Brush both sides with the BBQ glaze, then place under the broiler for 10–15 minutes.

7. Cut into 2-rib portions and serve.
