Tuna Tartare
Ingredients
- 125g sashimi-grade fresh tuna
- 1 small garlic clove
- Sea salt
- 3 tablespoons extra-virgin olive oil
- 3 tablespoons lemon juice, plus the finely grated zest of 1 lemon
- 1 tablespoon capers, drained
- 1 tablespoon finely snipped fresh chives
- 1 tablespoon finely sliced green shallots (spring onions)
- Sourdough, thinly sliced and toasted, or crisp wafer crackers, to serve

Method:
- Rinse the tuna briefly under cold water and pat it thoroughly dry with a paper towel. Cut into neat 1 cm cubes and set aside in a cool bowl.
- Place the garlic and a good pinch of sea salt in a mortar and pestle. Work to a smooth paste. Stir in the olive oil, lemon juice, lemon zest and capers until the dressing comes together.
- Finely snip the chives and thinly slice the green shallots. Fold them into the dressing.
- Gently combine the diced tuna with the dressing so the tuna is lightly coated. Taste and adjust the salt or lemon if needed.
- Spoon onto a cold plate and serve with the toasted sourdough or wafer crackers.
